here's a healthy short cut...

I am constantly looking for healthy meal options that will actually be EATEN! I am a fan of the Deceptively Delicious book, as well, but recently put together my own "fast food" muffin recipe. I don't often have a lot of time, or energy for that matter, so I've found myself modifying convenience items that you can find at any grocery store.

Here is the "recipe":

  • 1/2 package of Quaker oatmeal muffin mix
  • 1 large jar Heinz Organics Zucchini, Apple, and Cinnamon Medley
  • 1/2 cup water
  • 1 large egg
  • chopped walnuts (to your liking)

Mix altogether in bowl, spoon into muffin cups/tin, and bake at 350 for 25-27 minutes.
